I was at my local grocer yesterday when my phone rang. On the other end was my cousin from California who asked what I was up to. When I replied, “I’m at the grocery store looking for dates,” I realized it might cause some confusion so clarified that I wasn’t looking for dates in the romantic sense, rather I was looking for some pitted, chewy, anti-oxidant-rich dates for desserts!
On the 8th day of fitness, Hello Wellness gave to me: Tasty and simple recipes sure to satisfy your sweet tooth with a blind ingredient – dates!
I didn’t come up with any of these recipes so I’ll direct you to the proper website as I introduce each one and tell you which I favored the most. I am not the most patient person in the kitchen but I found that each recipe was easy and rather quick (less then 20 minutes each) to make.
No-Bake Fudgy Snow Balls from Skinnytaste:
If you like chocolate, you might favor these! The ingredients include dates, honey, cocoa, confectioner’s sugar, and water. I liked these but if I want something chocolate, I prefer something a bit less bitter. Other people enjoyed them more than me but I would consider making them again. The good news, I was satisfied with just one!
No-Bake Lemon Balls from Snack Girl:
I absolutely love lemon flavored desserts so this appealed to me the first time I stumbled upon the recipe. This recipe calls for only four ingredients: almonds, dates, lemon juice, and coconut. Some people thought it was a bit too tart or lemony but for me, there is no such thing as too much lemon! Definite two thumbs up, Snack Girl!
Date Treats by Lauren from Celiac Teen:
These are delicious and remind me of granola bar. I made a couple substitutions to the ingredients (almonds instead of hazelnuts and almond extract instead of vanilla extract). These are less dessert-like than the other two varieties and you could serve with breakfast. To add a little more sweetness and make slightly less healthy, mini chocolate chips might be a tasty addition. I will definitely make these again!
If I had to rank order these treats, I would give Date Treats the gold, No-Bake Lemon Balls the silver, and No-Bake Fudgy Snow Balls the bronze. The next time you are going to a celebration and need to bring something, consider making one or all three of these treats! The flavors are so diverse that I’m sure everyone would rank them differently. Do you bake or cook with dates?
