It was hot one in Des Moines today! In lieu of using the oven I decided to make a salad for dinner. The timing was perfect since we just harvested the lettuce from our garden yesterday. Wanting to try something new, I decided to make Salad Niçoise. I came upon a few different versions of this salad but below is how I made mine.
Ingredient list for a Salad Niçoise for two!
2 Tomatoes, sliced
5 New Potatoes, boiled
1 cup of green beans, boiled
2 hard boiled eggs
1 can of tuna*
2 T of capers, rinsed
1/4 cup of red onion, chopped
Ingredients for Vinaigrette
Juice from one large lemon (approximately 1/4 cup)
1/2 cup of extra virgin olive oil
1 T Dijon mustard
1 small shallot, minced
1 T each of fresh basil, thyme, and parsley finely chopped
Salt and pepper to taste
Whisk all of the above in a bowl.
Prepare vinaigrette. Use 1/3 of the vinaigrette to marinate the tuna, another 1/3 of the to flavor the lettuce and the last 1/3 to flavor the boiled potatoes. Arrange the lettuce on a large plate and top with the potatoes, tomatoes, egg, capers, tuna, beans, and onion.
*Many recipes call for fresh cooked tuna but canned works well enough. I used capers as a substitute for anchovies which are a common topping for this salad.
