Tonight I was in search of something to go along with the sandwiches we were having for dinner. In lieu of heading to the grocery store I turned to the cupboards and freezer for a few random ingredients that I didn’t have plans for. The result was a simple summer salad which I ended up naming, “Simple Summer Salad!” It was delicious and this is one pasta salad I will make again.
4 ounces of pasta; I used ditalini
1/4 cup of pine nuts, toasted
1/4 cup of frozen white corn
One half of a tomato (I really enjoy yellow tomatoes but any type would suffice)
About five or six large basil leaves, sliced
3 Tablespoons of extra virgin olive oil
2 Tablespoons of balsamic vinegar
Blue Cheese crumbles
Sprinkle of salt
Cook and drain pasta; rinse with cold water. Add pine nuts, corn, tomato slices, and basil leaves. Add extra virgin olive oil and balsamic vinegar. Stir well and top with blue cheese and sprinkle with a dash of salt.
If you’re not fond of the cheese or vegetables I used I’m sure you could substitute about anything and it would be delicious. The next time I make this I’ll probably add white beans for a bit of protein. Enjoy!
