Last night I remembered that I needed to once again make something for a gathering, this time a going away reception. While I really enjoyed making the tasty taco dip last week, I decided to do something a bit healthier and in my opinion, a little more attractive. I have made these mozzarella tomato skewers in the past but used full-size skewers. To save time and ingredients I decided to use toothpicks for this occasion.
There really isn’t much to this treat other than grape tomatoes, mozzarella pearls, and toothpicks. The mozzarella pearls I purchased were already seasoned with red pepper flakes, basil, and olive oil. I have made this same recipe before using plain pearls and added my own basil and olive oil. For the sake of time I cut a corner and got the pre-seasoned pearls at one of my favorite places, Gateway Market.
