Broken Lasagna

Broken Lasagna Ingredients

Do you have your Meatless Monday meal ready for tomorrow? If you’re not familiar with this movement, it is a non-profit initiative that encourages people to give up meat one day a week to enhance personal health and environmental wellness.

If you’re looking for a quick and easy recipe for tomorrow night, consider trying Broken Lasagna. All you need is:Broken Lasagna

1 lb of lasagna broken into 1-inch pieces
About 20 cherry tomatoes cut in halves
1 cup of fresh, grated parmesan cheese
1 cup of toasted pine nuts
1 cup of toasted bread crumbs
A handful of fresh basil strips
3 tablespoons of extra virgin olive oil
Fresh goat cheese crumbles

Boil the pasta as directed. In a small bowl combine the tomatoes, pine nuts, parmesan cheese, and bread crumbs. Add olive oil and fresh basil to tomato mixture. Cut the cooked lasagna with kitchen sheers into bite-sized pieces. Toss with fresh goat cheese crumbles. Enjoy!Food 10 Ta Da
