Do you know that pistachios contain lutein, an antioxidant that promotes healthy eyesight? Recently these have been one of my favorite snacks to have around the house and I wasn’t even aware of their tremendous eye benefits. I found a recipe for a pistachio shake in Men’s Journal magazine and had to try it. What I like best about this shake is the crunchy texture.
1 cup of skim milk
1/2 cup of Greek yogurt (I used vanilla)
1 frozen banana*
1/4 cup of shelled pistachios
Blend all ingredients together and voila!
*I use frozen bananas in a lot of smoothies and recommend slicing them before you freeze.
